When I scale a page up on a desktop computer, everything gets REALLY funky. The positions of objects move all around. Tables and their content are sick-looking. What am I doing wrong?

Maybe you are using floating elements like "floating text", "floating image" etc? These are using relative positions based on the size of their parent element. Sounds what you describe there could be this effect.
If that's the case, don't use these for creating your whole page. Use containers and text, to lay out your page.
