What are exactly the new search engine improvements in the new 3.1?

The probably most important change is this: If you are using heading tags like H1..H3, which you should in order to mark the titles of your website, then the code generated inside those is now much more friendly for bots as used by Google and Co.
Subtle other changes like this also for some other objects.

Thanks Nico. From my experience I see that Google loves Wordpress Websites and my other websites made with Wordpress ranks very well. Honestly, they rank better than my othe 4 websites made with RocketCake. But I love RocketCake because it is small and very easy to use and RocketCake is 100 times better than Mobirise in my opinion.
As most people search only with Google, everything needs to be optimised just for Google. Sad but truth.
