Idk if its just me but whenever I try adding a behavior it just closes the menu and doesnt add it. Is there a fix to this issue if anyone has encountered the problem?

This is a known bug and caused by due to mismatching and other conflicts between custom extensions.
To solve the issue simply, move all the extensions from your extensions folder to a temporary location and now only add those extension that you want to use in your current game to the extension folder and then reload the extensions and plugins in editor or simply restart the coppercube editor.
You will be then able to add the behavior normally.
