What's the best way to add a caption to an image that stays below the image across all devices? I tried to insert an image and text box in a container but the text box ends up in the image. I want it to always be with the image and preferably below the image.

Depends on how you want it to work. I'd put it into a container, make it 100% in width, press enter and write the label text you want to have there. That's probably you want to have.
Did you also see that the 'image gallery' element supports labels?
